For the love of goat cheese.  So good…and just wait, it gets better.

Goat Cheese and Roasted Garlic Pizza with Arugula

Adapted from Ina Garten

(serves 4)

What You’ll Need:

1 pizza dough (I used TJ’s Whole Wheat – $1.29)

3 tablespoons olive oil ($.24 at $.08/tablespoon)

4 cloves garlic, sliced ($.12 at $.03/clove)

5 sprigs fresh thyme or 1 tsp. dried thyme (trace)

1/4 tsp. red pepper flakes (trace)

1 cup grated mozzarella ($2.50 at $4.99/lb)

2 oz crumbled goat cheese ($1.00 at $2.49/5 oz. package)


1/4 cup extra virgin olive oil ($.32 at $.08/tablespoon)

juice from 1 lemon (free!)

fresh ground black pepper

3-4 oz. arugula ($.85 at $1.99/7 oz. package)


Make garlic oil.  Place oil, garlic, thyme, and red pepper flakes in a small saucepan and simmer over low heat for approx. 10 minutes.  Don’t let garlic burn.

Preheat oven to 500 degrees.

Roll out pizza dough to desired thickness.

Brush dough with garlic oil and sprinkle with salt and pepper.  Top with cheeses and bake 10-15 minutes or until cheese begins to brown.

Make vinaigrette.  Whisk together olive oil, lemon juice and pepper.

Toss arugula lightly in vinaigrette and place on top of pizza.  Serve immediately.

TOTAL:  $4.91 or $1.23 per serving.  Serve with a small side salad and you’re under $1.75 per serving.

    This pizza is so good! I loved everything about it from the garlic infused olive oil base to the mozzarella and goat cheese! The arugala salad on top is so refreshing! Love,love,love this recipe!
