Ok, the past few weeks have been nutty.

I thought summer was the season to kick back, relax, lounge by the pool with no place to go and nowhere to be, perhaps with a margarita in hand if it’s after 5pm.

Um…not so much.

Don’t get me wrong – I love all our summer activities…the neighborhood bbq’s, camps, swim lessons, and the other fun projects I’ve been working on.  But holy smokes the first stopping point I had was Friday night when Andrew and I sat down and for the first time in literally 6 weeks and turned on the boob tube for no reason at all.  And I loved it.  King of Queens.  That’s what we watched, and I was thrilled.  Don’t judge…I’m too cheap to splurge for cable 🙂

But this week I’m back, I’m focused and I’ve got 6 tasty meals for you for only $48.20!

Dinner #1:

Summery Corn and Bacon Pasta + Simple Side Salad

Prep and Cooking Time:  30 minutes

Total:  $8.85 for the pasta (serves 6) + estimated $2.00 for the salad for a total of $10.85

Dinner #2:

Pan Roasted Orange Balsamic Chicken + Sauteed Zucchini with Honey Basil Vinaigrette

Prep and Cooking Time:  20 minutes

Total:  $6.22 for the chicken + $1.92 for the zucchini for a total of $8.14

Dinner #3:

Prosciutto and Caramelized Onion Pizza + Simple Side Salad

Prep and Cooking Time:  30 minutes

Total:  $5.61 for the pizza + estimated $2.00 for the side salad for a total of $7.61

Dinner #4:

Curried Chicken with Zucchini and Couscous

Prep and Cooking Time:  35 minutes

Total:  $7.13 for the couscous

Dinner #5: 

Cinnamony Baked Oatmeal + Eggs+Seasonal Fruit

Prep and Cooking Time:  45 minutes

Total:  $3.83 for the oatmeal + estimated $3 for the eggs and fruit for a total of $6.83

Dinner #6:

Lemony Chicken and Potatoes + Simple Side Salad

Prep and Cooking Time:  1 hour, 25 minutes (most of that is cooking time)

Total:  $5.64 for the chicken and potatoes + estimated $2.00 for the salad for a total of $7.64

Total for 6 nights of delicious dinners:  $48.20!  That’s about $1.61 per serving!

Shopping List:

Meat and Seafood

  • 5-6 pounds boneless skinless chicken breasts
  • 2-3 ounces sliced prosciutto
  • 6 slices turkey or regular bacon


  • 1 head lettuce (or more, for 3 side salads)
  • 1/2 cup, plus 2 tablespoons, chopped basil
  • 1 head garlic
  • 6 zucchini
  • 1 onion
  • 2 1/2 tablespoons cilantro
  • seasonal fruit (for baked oatmeal “brinner”)
  • 3 tablespoons chopped fresh italian parsley
  • 2 russet potatoes
  • 2 lemons
  • 2 sprigs rosemary
  • 2 scallions
  • 4 cups arugula
  • 1 red onion
  • 1 1/2 cup corn
  • 3 shallots


  • 2 teaspoons curry
  • 3 1/2 cups chicken broth
  • 1 1/4 cup whole wheat couscous
  • 1 teaspoon poultry seasoning
  • 1/4 cup orange marmalade
  • 1/2 cup balsamic vinegar
  • 1 pizza dough
  • 1 pound pasta of choice for corn/bacon pasta
  • 3 cups oats
  • 1/2 cup dried fruit – raisins, cranberries, apples, apricots, etc
  • 1/4 cup applesauce
  • 2 teaspoons vanilla


  • 1/2 cup plain greek yogurt
  • 3/4 cup grated Asiago or Parmesan cheese
  • 1 cup mozzarella
  • 2 cups whole milk
  • 2 eggs, plus more for “brinner”

  3. What a great blog and what useful meal tips at a time where people definitely need to budget more. It’s amazing how much you can save when you cook at home. Your plating is awesome too, great pics.
