next week’s menu plan #15, 6 meals for $57.94!

We have ants.

I’m not sure there is anything I detest more than having those tiny little ants happily march their way around my kitchen (ok, that’s an exaggeration…I’m sure if I really thought about it I’m sure I could think of lots of things).  But it’s MY KITCHEN!  What the heck are they doing cruising around, checking things out, munching on the crumbs from my kids’ PB&J sandwiches, getting all up in my coffee maker like they own the place??  Am I right?  Ugh, talk about violating.

Several years ago Andrew and I tried a number of times throughout the summer to tackle the problem ourselves, and several headaches and a bottle of windex later, we called the exterminator.  Best $99 I ever spent.

So guess who I’m calling at 9am tomorrow? 🙂

Now that you’ve heard my ant rant, let’s talk this week’s meal plan!  We’re serving up lemon herb chicken, the popular mexican chicken and rice bake, my favorite vegetarian pasta (with beets and goat cheese!), and tortilla soup (please, Fall, make an appearance so we can eat our soup without the A/C blasting!).

Dinner #1:

Lemon Herb Chicken + Favorite Veggie

Prep and Cooking Time:  40 minutes

Total:  $8.26 for the chicken + estimated $2.00 for the veggie


Dinner #2:

Mexican Chicken and Rice Bake + Side Salad

Prep and Cooking Time:  35 minutes (not including chicken cooking time)

Total:  $8.70 for the chicken bake + estimated $2.00 for the salad

Dinner #3:

Turkey Meatballs with Golden Raisins and Pine nuts + Favorite Veggie

Prep and Cooking Time:  25 minutes

Total:  $7.91 for the meatballs + estimated $2.00 for the veggie


Dinner #4:

Spaghetti with Golden Beets, Arugula Pesto and Goat Cheese + Side Salad

Prep and Cooking Time:  25 minutes

Total:  $7.15 for the pasta + $2.00 for the salad

Dinner #5: 

Quinoa Stuffed Bell Peppers + Side Salad

Prep and Cooking Time:  1 hour, 20 minutes

Total:  $4.85 for the peppers + estimated $2.00 for a side salad


Dinner #6:

Chicken Tortilla Soup + Cornbread

Prep and Cooking Time:  45 minutes

Total:  $9.07 for the soup + estimated $2.00 for the cornbread


Total for 6 nights of dinners:  $57.94!  That’s about $2.07 per serving!

Shopping List:

Meat or Poultry

  • 10 (4-6 ounce) chicken breasts
  • 1 pound ground turkey or chicken

Produce/Herbs

  • 5 onions
  • 1/4 cup rosemary
  • 3 tablespoons fresh sage
  • 3 lemons
  • 1 bunch cilantro
  • 3/4 cup corn
  • 1/4 cup green onions
  • 6 cloves garlic
  • 2 shallots
  • 2 veggies of choice
  • 4 cups arugula
  • 4 golden beets
  • 4 red bell peppers
  • 1/2 cup italian parsley
  • avocado (for tortilla soup)
  • salad ingredients (for 3 salads)

Pantry

  • 1/2 cup salsa
  • 1 cup white wine
  • 4 cups cooked brown rice
  • 1 15-ounce can black beans
  • 1 4-ounce can green chiles
  • 1 cup walnuts
  • 1 28-ounce can diced tomatoes
  • 1 cup dry quinoa
  • 1/2 cup pine nuts
  • 1/2 cup raisins
  • 1/2 cup breadcrumbs
  • 3/4 pound spaghetti pasta
  • 8 corn tortillas
  • 6 cups chicken stock
  • cornbread

Dairy/Eggs

  • 1 cup shredded cheddar or jack cheese
  • 1 egg
  • 1 cup plain greek yogurt
  • 3 ounces goat cheese
  • 1/2 cup feta cheese
